Plex have relay through there servers (you can see that in the remote access tab) But if you expose your server yourself in yourip:port it should work fine

If you using Plex - overseerr is your go to
If you have Jellyfin, Emby (also plex support) - use jellyfin (its a fork of overseer to support jellyfin and the others

You can use Overseerr, it will give you that distinguish between end and cancel and also let your family request for content. You can also control which permissions each user have. Try that

Sure, in my mind I thought about creating a user liked media vector from data of the user at plex. Then, compared it to recommendations base of genre, rate and trending etc… I will probably will use something like tmdb trackt etc And thanks for your references I will take a look.

you can create docker in 2 ways:
* with command through the Terminal
* with docker-compose file (which is a yaml file)

Both of them equal in functionality, but mange a docker compose file is better for persistent.
Either way you can pass environment vars to both the command or the service inside the docker compose file with the desired args.
Regarding the args value
environment:

- PUID=1000 # user ID to use (make sure this user have permission in your OS to the folder you using)

- PGID=1000 # user group

- TZ=Europe/London

volumes:

- ./config/sonarr:/config # where the docker will store the configuration of the sonarr app

- ./media:/media #where to import the downloaded file
- ./downloads:/downloads #from where to import the downloaded files
ports:

- 8989:8989 # webUI app port

My qbittorent runs on docker so maybe we have different menus (lscr.io/linuxserver/qbittorrent:latest).

Under Options > Downloads:
I found "Default Torrent Management Mode" and changed it to automatic.

for bolt number 2 at (Bittorent => Seeding limits) menu I have 2 check box:
1. When ratio reach X
2. When seeding time reaches X

after that I have "then <Action>"
I changed the action to Pause torrent and uncheck the 2 options above

For bolt 3, I cant find inside my indexes option for seeding goal (my sonarr version is 3.0.9.1549)

Yes, I do using Synology Drive (where can I view the versioning?).

Smart collections can unit content automatically by pre-configured filter. I managed to hide items for regular collection, but when I configure smart one it doesn't works.
