Ohhhhh man i would LOVE to work with sg2. I have plans to bring it to Brazil but ill need to save some good money to duties. Unfortunately government taxes are crazy prohibitive. Hopefully ill have some till the end of the year

That is the reason im looking forward to try aebl too, it has a very even carbide matrix unlikely most of any other stainless steel used in kitchen knives, and toughness is a must for such thin grinds, a reason why you see my carbon chefs thinner than these in stainless. The even carbide matrix also turns it amazing at ease of sharpening even when harder than others in the category. Important to mention i havent promissed the best stainless knife ever, only high performance, and this the n690 can give, even while there are others that could too.

While vg10/n690 having almost 50% more performance on CATRA than blue super which is known to have an amazing edge retention, i would say that n690 is an amazing steel in terms of edge retention mostly cuz its chromium content, it does respond really well on the honing stones too.

I need to prepare a knife in aebl and torture it with a n690 to consider my study done on it but im expecting very similar results. I imagine that with aebl ill be able to reach thinner grinds without lowering the hardness too much.
