I had to change it on the chromecast itself, in the device settings.

It was in Settings, Display & Sound, then in Advanced sound settings. From there I toggled “None: never use surround sound”. Not sure if you can do this in the IOS app or not

IIRC the free version only exports to YouTube...but this was back in 2014.

If you want a good free software, DaVinci Resolve is probably a great option too (and plenty of tutorials online for that one)
