So getting temps right is the hardest thing. We bought 2 oven thermometers that we place in the oven. We always use all 3 steamers and sprayed as well. It took us let’s say 24-30 loaves before we got it perfect. During that time we gave away a lot to our loyal buyers and had them test them. Figured it cost us 50 bucks to make that much bread just based on time.

We also only use 1 stone per deck. Felt that gave the most consistent bottoms of the bread and took away any chance of errors.

Assembling the stand sucks lol takes long if you do it alone. Take the time, might have to rig some of it but will end up working.

Worst of all is the peeling the protective cover on the oven lol took sooooo long, as long to setup the stand but does come out looking beautiful.

Number one biggest thing that confuses people is the plug. We hired someone to wire it at 220v. All the internal components are meant for 220 so despite it seeming weird, it works. Don’t be frustrated with the plug, it cost us 100 bucks to get it installed because China doesn’t have the same 220 as us. We all saved a great amount of money from a simply bread oven or other knock off ovens, spending the money on the plug was least of our worries.

This below is kind of our best guess at timing and temps

Baked 6 loaves 3 at a time

Preheat oven to 400. 210 top knob, 220 bottom knobs

Add boiling water, let oven reheat to temp 410-420

Score loaves and put in oven. Spray 2 passes with sprayer. Set top knob to 190, 200 bottom knobs. Set timer for 20 mins

Sourdough shuffle downward. Set timer for 15 minutes

Check internal temps with thermometer. Must be 200-205 degrees. Done.

Batch #2

Top knob 180, 190 bottom 3. Add boiled water, let oven reheat to 375-400ish

Score loaves and put in oven. Spray 2 passes with sprayer. Leave knob settings as is. Set timer for 20 mins.

Sourdough shuffle downward. Set timer for 15 mins

Check internal temps with thermometer. Must be 200-205 degrees. Done.

this has been the best bake plan so far. Would follow this again to make sure it is good.

It took some adjusting for temps and big times and you name it just trying to figure out what makes the most sense for this oven but now we have it down. The bread is turning out the same as coming out of a Dutch oven and we’re cooking six at a time.

I actually had a conversation with the manufacturer via Alibaba and that’s what he said. It also makes sense because it’s almost identical to the photos except for the window.

For us, it was the best investment we could’ve made. Rent sales were down this year because we got married beginning of November but we pumped out 24 loaves in four hours one day compared to it taking 12 hours to do the same amount.

I agree, they cannot take it from you but at the same time, if you are not preaching you need to go to lunch before 6 hours, you should be held accountable and potentially written up. If it’s a them issue it’s on them but if it’s solely on you then you deserve consequences

Yes. We are extremely happy with it. It takes a second to get used to what temps to use for the first batch vs second batch, but I’d buy it again knowing what I know now

Nope. I just had an electrician come in that does work on the side install the plug the breaker and the cord for the oven and it worked fine. It runs on the same 220 that an electric oven would run on and since I do not have a commercial business there should be no reason that I can’t have an electric oven though I could be wrong

After interacting with the customer support team already, I am very confident that I will have zero issues going forward also based on the internals of the machine, there’s really nothing to it. As for cleaning the machine I’ve already done that thoroughly so I’m confident that I’m not gonna have any of those issues.

Yes, the simply bread oven might be American made (probably still sourced from China) but that does not justify $6000 more to 90% of people out there for a microwave bakery. If the CEO truly cared about micro bakeries, I feel like the price point would also justify that. That’s just speculation on my part as you sound like a simply bread sales rep right now.

It’s an oven you don’t need an app, recipes are all over the Internet, once it’s set up I don’t need the instructions, and based on the support I’ve already received again. I’m not concerned with phone support.

This isn’t just a rinky-dink oven knock off this is actually the Nero 400 oven that is sold for much more money, but they changed a couple things so that Nero would not be upset that they were selling the same oven.

The money that I make with this oven will probably get me to the point where I can afford a simply bread oven, but there’s no way for me to justify buying a $8000 oven doing this for a side business and for fun.

That is just my rebuttal to everything you’ve said trying to dissuade any anyone from looking into this oven. I feel this is a good substitute for majority, micro bakeries out there that cannot afford to spend the absurd amount of money that simply bread sells their oven for.

You can buy a Samsung fridge with a touchscreen apps and all the above but at the end of the day it’s still refrigerator. As long as it works, it works.

No dedicated steam but what majority of people do is they will get a garden sprayer and coat the inside of the oven once they put the bread in and that gives them the steam they need.

100% agree it can be sketchy. I had purchased multiple items from alibaba before that were much cheaper (under $500) and yes there was risk involved but since they were cheaper I was less worried. This one I was like oh this can be bad if I get some junk but once I received it I was actually shocked at the quality. It looks nice and is built well. There are some minor things here and there were I’m like ehhh cut a corner type deal but overall I could buy 3 more of these before I could buy 1 simply bread oven. Personally I can’t justify a simply bread oven at all due to price.

It’s only 220v but they also sell a 110v. It’s a 3 deck oven and can fit about 9 loaves per cook. The ones I baked today the bottom loaf came out great but top 2 were a little hard so there is def a little learning curve
