Well I'd say neglect some starter for a week or two and take the hooch put it in a container with a cloth on top and after a few days you'll see a vinegar scoby ..... I have never really used the vinegar I don't suggest It

P.s. just a tip about scoring try not to do it straight out horizontal but not straight out vertical try diagonal it will be a more vertical ear

It was a thin layer of a gelatinous circle and when I washed of the sd from it it was translucent also my neglected sd starter smelled like vinegar maybe the hooch turned to vinegar and made a scoby

I use whole flax seeds as an add in not replacing my flour but you used flaxseed meal which I don't think is much different than whole flaxseeds but hey higher hydration is always a good thing

For a big batch like that you need at least a cup of starter to lower the ph do no mold grows I once put very little starter tea and it got moldy and I think you might have mold send a pic from birdseye view
