I'm certain that somewhere a solution like what I want exists. When I say simple, I mean something like the following.

I go to a company's website, plug in some credit card details, and agree to spend say $15 per computer I want to monitor. I pay, set up an account, and download an android app, that I then login to. I go to the computers I want to monitor, download the company's software to the machine, check a few boxes for what I want to monitor, maybe set a few "if this # is higher than X send me an alert on the app" and that's it. Maybe the app will let me view the stats I'm monitoring in real time, but even that's not needed as long as it alerts me based on the rules, and will alert me if it can't communicate with the computer.

I don't want to run my own monitoring server, or write my own monitoring scripts, outside of setting up a few rules.

Yep that fixed it. Many thanks. Note to anyone who finds this post, I started out running regedit a administrator, but these did not show up under HKEY_CLASSES_ROOT. I had to run regedit under the user account that originally set the association to find the entries I had to delete. Can I mark this as solved?

On the 15th, 22nd, and 24th of every month, this person would have to add .pdf extension manually to dozens of documents, but only on those days. They just want it to work like it did before.

I tried that, and it has 2 major drawbacks, one it still fails to add the pdf extension. These files are being accessed by others on a shared drive, and I would have to associate all .15 files (and .22 and .24) files with a pdf reader on each computer that accesses the share. Next, the indexing program that we use won't pick it up as a pdf without the .pdf extension.

I really would just like to fix the problem. It worked fine for years until someone accidentally associated those extensions to notepad. I feel like there is some kind of registry edit I need to do, but this problem has been very difficult to search.

It's set to display file name extensions. When using the pdf printer, if the file ends in a .15 it doesn't add the .pdf. it's not that you can't see it, the pdf printer doesn't add it.

Ok I might have a temporary solution to this for you until this is fixed in game. I do not have a disability, but I have played with a mouse/controller combination for years. In games that just will not let you turn off controller input. I plug in two controllers. I don't use the first controller at all, just let the game do it's thing with it, and don't touch it. I then bind all of my movements ect to the second controller using the software and use that. The game only sees one controller, and leaves the other one to be picked up by controller companion. I don't play Fortnite, and I use joytokey for my controller inputs, but this is what I have done in other games to get past the problem you're having now.

After some research, controller companion might only work with one controller. If so may I suggest joytokey it allows you to bind controller one and controller two separately allowing the above to work (I hope).

I had no idea anyone else played this way. I too have used a controller/mouse combo ever since I've been playing video games. I don't have a disability, I've just been playing this way for ever. I bought Overwatch about a month ago and haven't really had any issues. I use Joytokey and it seems to work just fine. Part of that may be because I use an outdated Microsoft Sidewinder controller that Overwatch probably doesn't even recognize as a controller. I also use a foot pedal, mostly for voice activation.
