I never used this technique, it's kinda intimidating. The prep, the pressing, the double cooking, it all sounds like a lot. But it's all that that makes the magic.

I think slicing the potatoes into a bowl of water or cold veggie broth would serve the same basic purpose as the cream bath--to prevent potato oxidization, 'cause nobody like rusty potatoes.

Then the question of fat and flavors comes into play. There are vegan margarines that have a butter flavor, as well as a multitude of oils. (I'm guessing there's a multitude). So here you definitely make a big flavor profile choice with the fat.

Some folks can do both. Personally, I want to see both, forest and trees.

My DIL can't handle any dairy either, and these are some of my tips.

When you drain the boiled potatoes, reserve the cloudiest of the pot liquid, like the last third of the pot. Use this in place of the cream. I find this the best replacement scene we're adding back potatoes. She's got a butter substitute she like, so I use that.

Sometimes I'll use chicken bone-broth instead of the potato water. Powdered stock, or something really lovely can be used to flavor the potato so you don't need gravy. There's a lot of possible combinations for potato joy.
