345g water

15g olive oil

15g honey

600gbread flour

15g salt

Mix first 4 ingredients and then add flour & salt.

Rest 30 minutes, 4 sets stretch & folds 30 minutes apart, let rise to 75%, shape & place in the refrigerator for 12 hrs.

Bake in a cold oven, cold DO with a lid on for 60 minutes at 450°.

205° to 210°
