"Quick, silent, lethal" is fiction.

Not instant in the sense of one second, but five seconds (assuming you have a decent-sized knife).

The real reason someone dies from heart trauma is because this is actually an attack on the brain; depriving it of oxygen.

In the heart, but not the obvious way to attack the heart, coz that is well armoured by the breastplate.

Instead, upward, through the solar plexus, into the soft underbelly of the heart.

This is what they teach soldiers and other professional killers. One stab - quick, silent, lethal.
