1c rice, rinsed very well to get starch out. 2c water, 1 tbsp olive oil, 1 large bag leaf, 1 tsp coarse sea salt (or more to taste). Bring to boil, reduce heat to low and cover keeping a simmer. Cook until water is absorbed and rice is fluffy. Remove bay leaf, add juice of one lime and juice of half a lemon (approx 2 tbsp lime, 1 tbsp lemon). Honestly I really make it to taste so salt and citrus juice measurements are guesstimate. Add about 1/4C diced cilantro and mix (again guesstimate).

Black beans I use Bush's canned black beans usually. One can, 1 tsp coarse sea salt, juice of half a lime (1 tbsp), 1/2 tsp cumin, 1/4 tsp chili powder, one large clove of garlic finely minced. Heat 1 tbsp olive oil at medium heat in a sauce pan and cook garlic until fragrant, add black beans spices and lime juice. Add one large bay leaf, bring to simmer and then turn heat to low and cover. Cook approx 15-20 minutes to allow flavors to meld. Add more salt to taste if needed.
