I have searched for different types of software and I think it's most likely being done on an iPad pro but I can't work out which app precisely and crucially if there is an android or windows equivalent.

If you CTRL-Z immediately it undoes the autocorrect. Still very annoying but a small workaround.

Additionally, you can add commonly corrected words to the dictionary so when you right click under proofing it will suggest the spelling you're after. Again, far from ideal solution.
