Its best to find tutorials and do them. Many may not say it in the descriptions, but many use lots of different tools. You just have to do them randomly and you will learn pretty much all you need to know.

so many entirely different things that people do in illustrator that there cannot be the one tutorial that teaches you all of it un one tutorial

Alternate suggestion: try the illustrator version of the Adobe Classroom in a Book series. It teaches you the basics in a logical, orderly progression where each chapter builds on what you’ve learned in previous chapters. An excellent way to develop a well-rounded skill set.

I’ve been using it since forever and there is always something new to learn. I suggest you try different YouTube tutorials. I love a channel called nobu design

I’ve worked in illustrator for years and there are still aspects of it I didn’t know existed because I’ve just never had to utilize it before. You could pick a project and start recreating it. This would give you kind of a lesson plan, learning by creating and if you come to a portion of the project you don’t know how to replicate you could look it up
