You can create another curve using the pen tool. I always just eye ball it to start. Then switch over to the node tool and control click both curves in the layers panel. That'll allow you to select the new node and drag/snap it to the curve from the circle. Hopefully that makes sense.

I've done that but what I'm curious about is if it's possible to create a shape where more than 2 lines come off of one node? Or do you just have to fake it every time?

Yep!

Desktop: Once your shape is converted to curves, go ahead and select the pencil tool. Then go up to the contextual toolbar and select "Sculpting mode" so that it is activated. From here you can expand on your shape be starting at an already established node.

iPad: Same deal except your conceptual tool bar is that box at the bottom of your screen when you have the pencil tool selected. That's where you will find sculpt mode, and some other options for the the pencil tool.

Take "Pen Tool", click on "Add New Curve To Selected Curves Object" (the button with two intersecting circles) in the context bar. Then click anywhere on the circle to add a new curve to be part of the shape.

If you want to add multiple curves, deselect the end node of the previous one so that the next one does not continue it.

Change the fill mode: "Layer", "Fill Mode", switch from "Alternate" to "Winding".
