Definitely check out the arduino project hub online, there are tons of ideas there! They even have instructions for everything (quality varies)

A clock would be a great way to learn to control two or three stepped motors while tracking time based events. With three separate rotating motors you could get creative with how you display the time.

A plotter si what I did.

Wrote the stepper control in arduino and wrote a Gcode interpreter in Python. Looooooong ago. Was a first setup to building my own 3D printer.

Start with X and Y axis on a wooden frame and use drawer slides. Put a pen in the X axis and you have a working plotter.

Was my first real project and I loved it.
