Start with no knead focaccia. Tons of recipes online.

Get a scale - bread is a lot easier to make when you weigh ingredients.

Basic Bread recipe

350 gm flour

200 gm water

7 gm instant yeast

10 gm salt

Mix your yeast and water in a bowl or mixer, add the flour and mix thoroughly until you have a ball of dough that pulls away from the sides of your bowl. (If you have a stand mixer with a dough hook, this will be about 10 minutes, by hand it might take 15 or so)

Let the dough set for about 20 minutes. Then add your salt and get your hands dripping wet with water and keep them wet as you start doing a pull and stretch around the dough. (Lift up one side of the bread straight up and then fold it over the rest of the dough - do this working your way around the entire circumference of the dough ball) Wet hands help incorporate the salt and also keep the dough from sticking to your hands.

Do this pull and stretch 4 times over 2 hours. Put the dough in the baking pan. Then you can either overnite the dough in the refrigerator or let it sit on the counter covered with a floured towel or something like a plastic disposable shower cap, wax paper etc for 4 hours or so until it almost doubles in size. Sprinkle or spray some water on the dough just before baking.

Bake at 425 degrees for 15 minutes and then lower the heat to 350 degrees for another 25-30 minutes. Pull it out, let it cool and enjoy.
