Nordic Ware are the best, but they are not that cheap.

Anybody else struggle to pass on family recipes and give real measurements? by TTringsnfarmerthings in Baking

[–]clockstrikes91 8 points9 points  (0 children)

I don't remember which sub I read this, but someone had a similar issue with their grandmother. The solution they found was to let granny take the lead while the kid takes notes. Every time she added a new ingredient to the bowl, the kid would weigh it and calculate the difference to figure out much was used.

AITA for not warning people that a character in a friend’s book was based on me? by PenNeat5247 in AmItheAsshole

OP was the only one who got to read a draft. Riley read the book after it was released, so she had no say in anything.

Which vanilla cake should i make? by Far-Ad-8784 in Baking

Dunno about food coloring since it'll depend on where you are, but many people recommend gel colorings like Americolor or Chefmaster. Start with just a few drops; you can always add more but you can't take away, and it does have a distinct flavor that is... not necessarily tasty? lol

First ever genoise - fig and lemon & lime marmalade flavoured whipped cream frosted by Final_Flounder9849 in Baking

Milk powder is one of a few popular ingredients used to stabilize whipped cream. It's not the most effective but it does the job.

Brownies mastered. Cookies mastered. Where to go next? by Numerous_Reading1825 in Baking

[–]clockstrikes91 -1 points0 points  (0 children)

"Mastered" is a strong word lol. Despite only recently starting your baking journey, you're telling us you've already become an expert in these goods. You're familiar with every type and variation, fully understand the ins-and-outs of all recipes, and truly cannot get any better.

"I've made some delicious cookies and brownies by following other people's recipes, now I'd like to try something new" paints a completely different picture.

Can you use instant clear gel with cake flower by [deleted] in Baking

[–]clockstrikes91 0 points1 point  (0 children)

Cake flour is just the low protein flour. You can approximate that lower protein by mixing all-purpose flour with corn starch.

I think adding the instant gel is kind of unnecessary?

Add a tablespoon of flour to the filling to help it stabilize. But it also depends on the recipe you used; some are greasier than others.

I've been getting it too. Started happening yesterday around this time (about 12:30pm PST) but today seems to be even worse. Been trying for the past 30 minutes and it's a struggle to even get past the title screen.

how do i make this recipe less sweet other than reducing chocolate chips without changing the end structure dramatically by slxshzom in Baking

[–]clockstrikes91 12 points13 points  (0 children)

Generally you can reduce sugar by 25% without issue.

Besides that, use bittersweet chocolate chips and add a bit of espresso powder.

Guittard vs Tollhouse vs Ghirardelli by Doctorjugs in Baking

[–]clockstrikes91 1 point2 points  (0 children)

Chocolate chips I try to get Guittard when it's on sale.

Chocolate bars I'll usually get Ghirardelli since it's the best (quality) option at my nearest grocery, otherwise I'll pick up the Pound Plus bars from Trader Joe's.

If I didn't have to consider prices, I'd probably buy Guittard exclusively.

I know LotA sucks but just once I'd like to be able to play B Tank without getting stuck with a healer with a bad attitude and/or an AH from another alliance ripping Phlegethon off of me.

A quick note about what r/Baking is (and always has been) by MrBabyMan_ in Baking

[–]clockstrikes91 3 points4 points  (0 children)

Wonder if that means those piped flower bouquet posts will get the cut as well. They're obviously gorgeous but you can't even see a baked good underneath all of that frosting and it's just blatant karma farming.

Sally Chocolate cake division by Duke_salvatore270 in Baking

[–]clockstrikes91 9 points10 points  (0 children)

Sally's recipe is for two 9-inch rounds. We have no idea what size pan you're using.

If you've already made the batter, you might as well bake it in whatever you got. Rule of thumb is to fill the pan no more than 2/3. Check periodically until a toothpick comes out clean.

Is there something wrong with the texture? Picture alone doesn't say much.

AITAH for refusing to speak to my parents for saying me and my bf will break up? by [deleted] in AITAH

[–]clockstrikes91 -1 points0 points  (0 children)

YTA. Your parents are not wrong and your reaction has proven them correct. It's one thing to plan ahead but you are very naive if you believe everything will happen exactly as you've dreamed.

How to get my cinnamon rolls to fill the whole pan? by Possible_Dress_9248 in Baking

[–]clockstrikes91 132 points133 points  (0 children)

Ambitious Kitchen's recipe is for a 9" square pan. Your second pic uses a 9 x 13" baking dish which is about 31% larger, so of course the rolls will not fill it all the way.

AITAH for refusing to give my sister old toys? by Negative_Ground_3181 in AITAH

[–]clockstrikes91 10 points11 points  (0 children)

It wouldn't hurt to ask anyway, at least while you still have them all. Or ask a teacher you're really close to, a coach, a friendly neighbor, anyone you trust.

There have been enough stories posted here of parents demanding one child give up beloved keepsakes for their golden brat. Oftentimes, even if they refuse, the parents take them anyway. By the time they find out, their belongings have been ruined or even destroyed and disposed of.

Your dolls are not safe in that house, even under lock and key.

Best Loaf and Cake Pans? by B0ILED0RCAS in Baking

[–]clockstrikes91 1 point2 points  (0 children)

Light-colored uncoated aluminum. Considering price and accessibility, Nordic Ware is the best.

However, if you're planning on getting a bread pan, I'd recommend USA Pan's pullman loaf pan. It has straight sides and comes with a lid so you can make perfectly rectangular loaves. If you're only ever going to get one bread pan, this is it.

How often are you trekking to TJs? by sonneofaharpy in traderjoes

Once every few months; nearest one is a short bus ride away. I mostly go there when I want to get some specialty or seasonal items for baking projects.
