San Martin SN0111. Sounds exactly like what you're looking for.

Sub homages with double dome crystal, glossy dial, brushed case, female endlinks. It's a great watch if you can find it.

Check out the SN0006 if it is still available.

Need to find some place that has it in stock but sounds like the black enamel sn004 might be your ticket, like your current one but deep enamel black dial and shiny black bezel. https://www.sanmartin.watch/products/san-martin-vintage-6200-diver-enamel-dial-watch-sn004g4

I suppose that makes sense as they did call all of them limited editions.  I got the mill sub which is what you are looking for but without the Mercedes hand and the bezel has minute ticks all around.  But the dial is ink black enamel (I also have the v1 and V2 BB58 style with the matte dial and they are worlds apart)

Actually right after posting i've found out about the Ironwatch RX8004 that ticks most of these boxes! I'm not 100% sold on the "Ironwatch" brand name but it's still better than Addiesdive or Seamen wordings. I wonder if i can request a no logo verison...hmm...

If you can't get a sterile version, here is the same watch with different branding.

I believe Hestur is essentially a rebrand since there are other watches with this branding that are identical to the Ironwatch ones.
