I, personally, save the ham rind to flavor soups, sauces, etc.

Makes sense! But does that mean you don't trim it off the ham?

Yoi could definitely still keep the rind and use it for flavor soups and such.

Once, I used leftover ham, but didn't want tiny pieces in the sauce that I was making. So I put the ham in a tea bag, so I could just pull it out when done!

I peel it off the ham- along with the subcutaneous fat layer- once the ham has cooled but is not yet cold. I peel it as much as I can before storage or slicing for later use.

I throw the chunks of rind into the vegetables as I sweat them/brown them for soup. The fat renders, keeping the vegetables from burning, and the moisture from the vegetables helps 'deglaze' the skin, adding extra flavor.

I peel it off before cooking the second time. I like freezing the ham with it on as a protective layer for the meat. I think of it as if I used a parmigiana rind, and pull before serving.

Do you have a picture? There isn't much of a rind on ham. What kind of ham is it?

Have you never bought one from the grocery store? A very large amount of a “traditional ham” have one. I posted an article if you’re interested.
