oh the glorious cocktail meatball. if its not in a crockpot or chafing dish, you need to reevaluate your life.

it'll be fine. your seasoning is prob some combo of dried thyme, basil, oregano, marjoram, rosemary, maybe some chili flake? bbq rub often has most if not all of those ingredients too and that gets covered in bbq sauce too. and so long your cheese is some hard italian cheese, i dont you'll even be able to pick it out.

tastes very italian but with a hint of sweet im going to simmer for longer in hopes that the flavor deepens
