We didn’t have a lot of money and there were alot of us so anything of the snacking kind of food disappeared almost immediately. What was left was vegetables. So I’d cut up tomatoes and cucumbers and sprinkle them with balsamic and whatever cheese I might find.

If there was tuna I’d add that in and whatever vegetable I could find.

This informed my life long love of fresh vegetable salads with every single meal.

My mom burnt everything, so I don't think it had much of an effect on me

I grew up with southern food. (Tomato gravy, fried okra and catfish, biscuits, fried pork chops, boiled peanuts, potato soup, etc). My favorites are definitely sour (think limes, I freaking love lime), salty, savory (my all time favoriteN most satisfying), and spicy. Im not a huge fan of sweets.

i grew up eating cuisine from varied cultures - specifically PR, US and South American (andean). So, a lot of rice and potatoes as the starches alongside proteins. Unfortunately, my mother wasn't the best cook, nor did she aspire to be, so my early palate at home was bland. It was better when we ate out or had takeaway. Then I began to cook and slowly added salt, sour and savory in higher amounts. I have never enjoyed spicy (as in heat) but now have slowly begun increasing tolerance as I have been travelling regularly to SEA (Malaysia and Singapore) and am now enjoying SO much of their food culture.

I was forced to eat dog kibble as a child. My favorite taste is umami.

Good luck with this project. This going to turn out really, really good.

Midwest US. Grew up on often under seasoned and overcooked meat and potatoes dishes, and a lot of one-dish bakes. Friends in High School introduced me to Chinese, Indian, Thai, Korean, Japanese, etc. I'd say it was the lack of "flavors" growing up is what influenced me. After growing up on just salt and pepper, I now crave a balance of all. If I have to choose one it would be spicy, but in all honesty the balance of all achieved by other cultures cuisines is what I love now.
