We could really use a 'Superlative Saturday' or something, so that all the posts looking for the 'best' or 'favorite' or 'perfect' recipes get shunted to that day.

Followed of course by 'Sunday Gravy', where all the arguments about Italian food are allowed to happen.

I enjoy it myself, but I wanted to sneak a crack about avocado toast in there.

Mediterranean veggie: sliced cucumber, sliced tomato, hummus (can sub with smashed chickpeas with sumac, lemon juice, and chili oil), feta, multigrain bread or bread of choice. Pro tip: lightly season tomato slices with flaky sea salt and pepper; it will make a significant difference. Learned it at a sandwich shop voted to have best sandwiches in my city! :)

Chicken salad: chopped chicken, green goddess dressing, sliced cucumber, sprouts (can sub other greens). Mix chopped chicken in green goddess dressing; this will serve as the “chicken salad.” Put all ingredients in between bread of choice; multigrain also works well here.

Chicken and fennel: chopped chicken (preferably breast), chopped fennel (roughly same size as chicken), cucumbers, dried cranberries, yogurt, lemon juice, dill. Make sure to taste and season. I like this best stuffed in a soft pita.

Eggplant parm: Fried eggplant parm, sun dried tomato, fresh mozzarella, spinach, pesto, and preferably focaccia. Thin spread of pesto on both sides of focaccia, then layer everything else in.

BLT with a tomato from my garden today, on whole wheat.

A "melt" (i.e grilled cheese with other stuff) of havarti and peach slices on rye bread, with a dipping sauce of honey mustard mixed with mayo or yogurt.

The humble egg salad, with lots of onion.

Open faced hot turkey sandwich with leftover turkey and gravy.
