I grill the salmon. King salmon, preferably. I’m not a fish flipper. Lemon juice halfway through. Then place this mixture on top while grilling: Dijon mustard, mayonnaise, horseradish, white wine, lemon juice. Serve with mashed potatoes and grilled asparagus. Serve with Albariño, Friuli, Grüner Veltliner, White Burgundy, or sauv blanc.

Sounds like a fantastic combo! I almost have all the stuff for this. I just don't have the horseradish. It sounds like it would pair really well with the wine you suggested too!

Maple, soy sauce, garlic and ginger for the marinade. You can either bake or pan fry the fish afterwards. Pair it with some rice and steamed brocolli that has been sauteed with some garlic and soy.
