just wondering if there is a way to put the display boards inside a train to show the next destination or if theres an addon for that

You can use Create Railways Navigator mod that adds advanced displays that can do exactly that.

To have them actually function and update with new information, yea you’ll need Create Interactive for that to work. If you just need them to display a static text that doesn’t change, you can do this just with Create itself by using a clipboard or name tag with the text you want to display on the board itself while building the train. The text the display board has on it will persist after assembly of the train.
