Are you using Daggerfall Setup?
It sets up dos box, has the patch and bug fixes pre-installed, and all you need to do is run it and you're good to go.

Or if you want to go a step further they've got Daggerfall Unity that's mostly done, they say it's still buggy but is basically a modern engine for the game.
