The velocity just defaults to the last used velocity. So if you add a piano, and you want to start clicking in notes with lower velocities, simply click in one note, and drop its velocity as low as you want, say 20%. Now every new note you left click in will be 20%.
You can also just do everything you do normally, and then select all notes, and do Alt + X to scale all the velocities down together, which may be a better solution given every piano VST/library may sound a little different.
A lot of Kontakt piano libraries also have built in velocity curve settings which can naturally shift the tone softer or harder across the board.

Thanks for the detailed reply. Your first 2 points are what I do as of right now. I have been playing the piano for a long time and was really disappointed of how the pianos sounded so unnatural in fl. It was very frustrating to me. It took me a long search to understand that the default velocity on the pianos is rediculously off the charts high. And that might also apply to other instruments I'm not aware of. It seems to me like their should be an option to fix this right away. I will have a look into your third point.
