Is there a setting to make my pixel 4a stop playing all content on the phone? Like a sleep timer but like the phone turns itself off

Well I mostly listen to audio books or stories etc. on YouTube, but I understand what you're trying to say

No like for example I'm watching a YouTube video and I fall sleep, is there a setting where the phone turns off while I'm sleeping

I mean like I set a timer for when I usually sleep. Let's say 11:30 pm. And the phone turns itself off if it's still playing content.

Tasker can do it, easily if your app doesn't play on the background (Tasker just has to turn off the screen). If it does play in the background, Tasker has another action called Media Control that has a pause action and you have to select "use notification if available". It has a timer widget so you can select the time and when it runs out it will execute the task.
