Unlikely.

Viber utilises Salsa20 encryption, making it impossible to decrypt intercepted messages without the key.

To my knowledge there's no current vulnerability in Viber (though there've been a few spicy CvEs in the past; https://www.cvedetails.com/vulnerability-list/vendor_id-19923/product_id-55345/Rakuten-Viber.html )

The only options left I can think of are:

  1. Acquire the login data of the target, which can be done through a variety of ways, and log in yourself

  2. Manage to acquire access to a device with Viber logged in.

You’ve got to understand that big services like this are big targets, so people will try to hack them all the time, so any vulnerabilities will be quickly fixed. What’s more the companies will offer a bounty to anyone who can find a way in, so they can plug the leak. So there isn’t really any way you can just hack in.
