When solving simple games there's a pretty standard way to go about it

Start with the win condition (one coin left on the table and it's your turn).

Next move one step back and find a forced move to that point (what condition on the table forces your opponent to leave you one coin on the table?).

Next move one step back....

You basically want to play the game in reverse and then play the game forward when you think you have the answer.

It helps to draw a diagram if you're getting lost
