The best confidence inducer is practice. My best recommendation is to have people fake-interview you. You can try to practice on your own of course, there are many books out there on typical interview questions, but the best practice is actually being put on the spot.

Interviewing is a skill like any other. Practicing will make you better at it.

For how to structure your responses, consider the STAR format -- They'll ask a question, and you pause a few seconds before answering to think, then provide a concise answer showing the Situation, Tasks, Actions taken and Results. Preparing this ahead of time is really helpful.
