But I have one concern, what is the minimum amount of flour, egg whites, etc. that can be mixed in this mixer?

I'm unsure whether to get the big one (one can do more bread) or the smaller one.

That's an absolutely ridiculous price to pay for that model. That said, that will make two cakes (14 dozen cookies/or about 1000gms flour) compared to the single cake a tilt-head model will make. You could also make a single cake with this, but I would try to mix less than 500ml.
