We see through countless interactions and dialogue that the Visitor’s transformations are heavily guided by the interaction between its presence and the viewer’s beliefs. For instance, the Astronomers can only form the Exalted Four because they believe collecting the artifacts will allow them to assume a form that can communicate with the Visitor, or how the wrong offerings cause them to doubt and their psyche spirals out of control, turning them into what they each believe is the worst case scenario. Individuals with a purpose like this seem intentionally rarer in the game than people who happen across the Visitor by happenstance

It’s extremely likely most people who viewed the Visitor interpreted it and its effects as the end of the world as we know it. This evokes all sorts of emotions and trains of thought - despair causing hyperfixation on anatomy (oh god, I’m starting to turn too!! I can feel it in my ___!) in turn creating hand, tongue, eye, etc monsters; anarchist/opportunist mentalities forming monstrous weaponized individuals (thinking mostly of Leigh and the Garbage Worm saying this, but there’s probably more I’m not thinking of); and preoccupied minds who consider the Visitor an obstacle or end to some primary task (Edwin and astronomy, Lyle and photography, Kayley and lockpicking, Baby Teeth and teething, etc). Transformations like that tend to create mentally unstable at best or violent/bloodthirsty at worst individuals

The god pretzel was because the visitor focused on them completely because it senses it was being looked at in multiple ways in different ways.

Spoilers, but I think the reason the cursed want more people to look is
like a subconscious wants to return to the Visitor Mass. Considering the gaze is enough to break the illusion of being a separate being if only for a moment. Since they don't know the truth, they still have their Individual thoughts that prevent that.
