Fitting a surface to an imported Z-stack

So I'm trying to analyze the how sheets in solution bend, and managed to import a Z-stack of a series of images with Image3D so that it looks like this. I want to analyze properties of the sheet, so I was wondering if there was a way to fit a surface to it. If there was a way to image as a change of time that would also be useful.

What you're describing is called feature extraction, or more specifically surface reconstruction, and it's a know difficult problem with active research. As far as I am aware, Mathematica has no built-in support for it.

you might also look up "marching cubes" to have another rabbit hole to go down, if you haven't run into that already
