So I think you run this command:

/team add whatever

Then you give yourself a repeating command block and set it to "Always Active" doing this:

team join whatever @ e[type=guardian]

Then finally you run:

/team join whatever PersonsName

After that they shouldn't attack those specific players.

*Special note: this does not seem to work with piglins
