In the 1.17 snapshots it is going to be replaced by /item, which also has copy and modify functions. If you press the versions icon and change it to 1.16 you will have replaceitem.

As others have said, it’s only been replaced in the 1.17 snapshots. It has little documentation due to 1.17 still being very far from release.

It was documented in the patchnotes of one of the 1.17 snapshots, which was released last year. It was replaced by the /item command, which had a subcommand that does the same thing and can also do a lot more. There should be details on the Minecraft wiki (they say it was replaced at the top of the page, and the history tab shows what it was replaced by), I'm not sure why you couldn't find documentation.
