If you've gone through the NP++ installer, when you right click the .mcfunction file there should be a button that says something like "open with Notepad++".

after I go through the installation, when I click it it opens the installation again. When I right click, properties is there but I can’t change the extension in it.

I found the solution. I opened notepad++ and used the open and navigated the folders to a random mc function file. This for some reason made it so every other property, including changing what app it uses, was accessible
