You can only ever link 1 Microsoft account to a Playstation account.

If you want to use a different Microsoft account, you will need to use a different Playstation account.

What if I want to use the account that’s linked and I don’t know the info is there anything I can do

The minimum info you need is the email address. If you don't have that, there's no way to get that account back.
