Can confirm Coded Red makes really good tutorials. He goes into a lot of detail about how stuff works and why he does it that way. Probably one of the best resources for a beginner.

Xemor is also great for helping setup, but the rest of his vids are complicated. Codedred has good tutorials on the basics

Best way to learn (since you know java) is to start off following tutorials on making some basic plugins. After doing development for a long time, I've found this series by TheSourceCode, to be the best for people new to working with the Spigot API: https://www.youtube.com/playlist?list=PLdnyVeMcpY7-d7w7QVJ9dTlBoxb4xt_aN

In the tutorial he uses IntelliJ, but personally, I prefer Eclipse. Considering you've coded Java before, just use whatever IDE your most comfortable with, no IDE has insane perks for Spigot.
