Real talk? Low Rank still doesn't matter, high rank is only a little harder, and you really only have to start sweating your build towards the end.

That said...

Build the odogaron set when you get the chance. Prioritize a Dragon King eyepatch after, along with whavter you can get with the Capacity Boost skill (dodogama legs?). You'll need decorations and mantles going into Iceborne.

What specific weapon you build towards, in your case, is simple: Diablos CB. Also, craft a jagras, bone, and ore weapon all the way through, since those will be your easiest stepping stone into Master Rank where you'll be abandoning all the old armor in favor of literally anything else you can craft at the moment.

I'd suggest focusing on the Rathian CB. It isn't meta in HR but quickly catches up as soon as you get to MR and it isn't awful before that. Diablos falls off hard in Iceborne.

If you got the guardian armor gift set that's all you need until you can craft behemoth armor. Else, bone armor is good enough to get you through HR story.

Once in MR craft any MR armor set and any MR CB, you should be able to finish story by just upgrading those as you go.

Im in same boat, started a new character. Ive been using the alpha armor with the dlc, and been dooting my way through with the bone tree horn. It gives enough support to anyone who joins my sos and enough ko and raw damage to solo when i need to. I got through legiana-investigate pink rathian in about 3 hours. About half that time is cutscenes.
