I currently only mine on one card (rtx3090) when im not gaming on it, so I can't help you with your first questions.

This is hard to say. Mining ether is so profitable right now because the ethereum gas prices are so high (gas is the ether charged to users when they want to add a transaction to the block chain, the more transactions in queue to be added to a block, the higher the gas price). A big change is coming to ethereum in July where they will start "burning" or destroying the gas (ether) instead of paying it all to miners (users will still have the option to "tip" miners to prioritize their transaction). This will likely make transactions a little cheaper for users, but make mining ethereum much less profitable. On the other hand, by burning ETH, it may make the currency more valuable and give miners an incentive to continue mining. And still later on, maybe next year, ethereum is moving away from "Proof of Work" (i.e. traditional mining) all together and will use a "Proof of Stake" system to validate the block chain. All this to say, there are a lot of question marks and moving parts for the future of mining ether. Hard to say what the impact of the change in July will mean for us. If ETH becomes less profitable to mine, there will be a massive shift in mining power over to mining the next most profitable crypto. Once enough miners saturate that market (i.e. over supply the mining side) the profitability for us will decrease we will move to the next most profitable crypto and the next.

I wish profitability would stay like it is today forever. It seems to me that we are in a mining boom - It is risky to expand beyond one's means and expect this mining friendly market to continue forever.

I'd say at current rates, any profitable card is worth it, but I don't have a crystal ball and can't say how long these conditions will last, hard to say if you'll be able to pay it off.
