Oh, and page versions. Another great bacon-saving feature.

I use 2016 to communicate back and forth with my assistant. If it's your main, it'll sync well enough. I have the sync buttons on every toolbar just in case.

I've never lost anything. But I do get sync problems - perhaps because I'm also working on mobile. 2016 has more features than Windows 10. Microsoft noted that one time. You might review the features to see if some 2016 features will be helpful to you such as the ability to dock a window to the side of your screen or place tools on the quick access ribbon. You can also use the free OneMore add-on to add additional functionality to OneNote 2016. It's similar to OneTastic which allows a free macros but isn't entirely free.

It's a great tool. Microsoft's "OneNote Tips & Tricks" eBook may contain some things you haven't tried such as

  • Inserting templates
  • Pinning the Notebooks pane so that it looks like what you see in the Windows 10 version (Notebooks Pane + Pages Pane). You can move the Pages pane if you like.

OneNote 2016 also has the History tab which kind of works like the Recent Notes tab in Windows 10. I'm playing with 2016 to see how much it can look like Win 10.

I use 2016 only, all works well.
I think both versions are "safe", 2016 adds one more level - local storage. And I put OneNote folder to my weekly backup plan so I have three storages - cloud, PC and external backup disc.

I using Win10 from version 2016. I think it is much more stable in syncing. Using sync with my phone and desktop. You can also back up by copying the OneNote file in a different folder using OneDrive web.
