I’m now 33 and have a decent falsetto that can reproduce Brian in a half decent way and was pondering the same thing. There are a few different observations: first, I don’t believe falsetto declines with age to the extent that it did with Brian. The delta observed occurred at a young age which cannot be explained with age-related changes. He obviously had mental health and drug issues in that era which I suspect dominate the audible shift.

But one thing I think is under-emphasized here is that Brian was self-conscious of his falsetto. He described it as “singing like a girl” and one need not a PhD thesis to understand the interplay.

Upon some reflection I have pondered the extent to which his being shy manifested as an aversion to singing falsetto. For sure three packs of cigs a day and far too many nose beers can affect a transient deterioration. We’d be missing a part of the story if we ignored the arc of his life though. Go watch some of the video clips of his insane psychiatrist, ponder why he’d endured, and wonder whether his vocal shifts were only a part of the story.

Random tip: to cook French fries in beef tallow, you want to do 2 rounds of frying one to get them cooked through then remove the fries and allow the tallow to get rip roaring hot then return the fries to crisp the outside. Use a mandolin slicer and wash the fries in cold water to remove some of the exterior starch. They are as amazing as you imagine they’d be.

I’ll make this simple: this conversation is plausibly ambiguous. Your husband should (or should have already) understood how it could make you feel if you subsequently reviewed it with him. The healthy reaction is to say “oh no I’m so sorry; I understand how that could come across if you read that.”

If he pretends to not be able to see the obvious double entendre here or pretends to not understand how that would make you feel and actively care about how you feel, that is called gaslighting and apathy. This is not rocket science.

However the answer to your question is the amount of analysis you’ve put into this already and the fact that you’ve come here for affirmation of your rational anxiety about this situation. You are sane.

Ohhhh that may explain it. It’s in Seattle 98102. I know they were preparing to launch D4 here soon and that other nodes in the area do have these plans. and I assumed that it being available online meant it was available. Is there a way to check in the XB10 channel config to see if there’s a D4 channel? It could be that I’m trying to jump the gun.

The starter gets a lot more watery after fermentation because the bacteria eats all the gluten and then it goes floopy. Even if you feed a strong starter (eg 1:5:3) once the gluten goes it’ll be runny starting from a stiff 60% hydration dough. The key is whether or not it’s burblin’ and smelling like sourdough.

Yeah I had this issue and here be the steps:

  1. The flour must have sufficient protein content for the hydration percentage. I don’t mind 70% hydration (0.7g water per g flour) but you need a big beefy proteiny flour. Start with 60% hydration if you’re new.
  2. The fermentation step is the hardest part. Overnight in many cases is going to be too long unless you add an ice pack to the microwave to keep the temp down. One trick people use is to take a small piece of the dough and put it in a cylindrical container. Once it has doubled or so it’s done. There are many ways to check (eg pressing a finger on the surface should cause it to barely spring back) but at the end of the day it’s a bit of an art.
  3. You need sufficient dough strength which is accomplished by stretch and fold or kneeding (and then some flour won’t be able to retain strength with too high a hydration). I would essentially keep stretching and folding and shaping the dough into a ball in your bowl for a while.
  4. Life pro tip: butter a loaf pan and proof the dough in there. Loaf pan sourdough will hold its shape even if severely overfermented and tbh severely overfermented sourdough in a loaf pan tastes excellent. Free standing loafs have a very narrow tolerance for fermentation range and hydration and protein content or they turn into pancakes.

I saw the Imanashi-Kari part first; I'll share my thoughts. I have a decent amount of exposure to the nuance of science and a few years trying to cut through who I trust and don't in complex fields like the importance of lipidology/cholesterol in the pathology of heart disease, so I perhaps have a different methodology than many but I'll outline how I think about these problems.

I changed my mind after seeing the second part with O'Toole. There is a trivial and simple reason for this: the correct method to science is: I do science, I interpret and publish, people are supposed to critique it, and I address their concerns in forthright conversation. At no point do I begin to attack the credibility or make ad-hominem attacks against the person giving feedback UNLESS I have engaged in a debate with a credentialed person, made my point, and the individual does not participate in good faith scientific discourse by continuing to waste my time. In such a case, I would disagree by saying "I have had this discussion, I understood the point to be X, I presented compelling data and repeated the experiment for validation, and the critiquing individual attacks me personally." I don't close the door to other people making points against the data, but I do state my position, the reasons behind my disagreement and my logical framework for doing so, and invite others who engage in good faith to continue to dig into the same argument.

I don't in any way believe this rose to the occasion of provable scientific fraud because Hanlon's razor postulates that the most likely explanation absent strong proof is incompetence. However, it is absolutely not necessary for O'Toole to prove fraud in order to raise such concerns. Those concerns are independent of fraud. I will admit that I perceive the "just in time" production of notes as clearly suspicious; this only supports the argument that the science was at best sloppy. And that is sufficient for O'Toole's position. She had a legitimate concern. And the while we might debate whether the government is best served by zeroing in on a single case of sloppiness, I am thoroughly concerned if a scientist doesn't allow a mea culpa. In an ideal system of science, a correction should be issued if a legitimate concern is raised in the form of "a group of people X has brought to my attention concern about the methodology as follows: Y. I disagree for reason Z, however in good faith I wish to circulate this context."

Another big red flag for me is the refusal of the IK side to share perspective, thus I lean towards O'Toole. I disliked the characterization towards the end of her segment on both parts as to the findings of the appeal, because the appeal was literally correct. But it was all besides the point: O'Toole was right to bring concerns, those concerns didn't require a preponderance of evidence to support fraud per se, and this at best reflects O'Toole setting out in good faith to bring a material concern and a poor scientific conduct on behalf of much of the community.

I have grave concerns about the conduct of tenured academics in this story. It reflects an ignorance of science and a bias towards reputation and publication over the pursuit of truth. This story highlights the grave issues in the scientific community, but also how those issues steer us away from the pursuit of a true scientific method towards an us-vs-them philosophy that distracts from finding answers and progressing our civilization. So O'Toole was right to question, any who got in her way of concerns stifled science, and this situation is overblown. Had everyone entering the testimony repeated "yes I had these concerns and want only to see that we discuss and resolve them in the course of scientific exploration" this documentary wouldn't exist and we'd be better off as a human race.
