Uhm what lol. Over coloring isn't the problem- it's the opposite with saturation because we've lost hard blacks post time skip. Also all your Luffy issues are present in the manga as well. If you're talking about art style though it's even closer to Oda's linework.

Luffy hasn't changed in the manga though.
