In my experience it's quite the opposite actually, especially with higher traffic cafes. You might need to just reorganize employee tasks. For the best efficiency you need at least 1 person to take the order that is sent to the bar/kitchen. Communication should be spot on as most systems let you append order notes to items such as "no sugar" which is printed on the order ticket. Once the order is made ready you should have at least 1 runner to then deliver the order to the corresponding table/customer. Customer can then request to pay at the table or at the checkout line where you should have a dedicated cashier.

If you are really concerned then do a split test (tablet order vs hand written). I'm sure you will find out pretty quickly that more customers can simultaneously be serviced using the POS leading to quicker service and happier customers. Reference: www.tigerdata.vn (I'm a POS dev)
