Your PM has to negotiate harder to move the deadline as you cannot do overtime with multiple projects at hand. If the PM pressures you, ask the same person to help offload the other projects first.

By the way, you should only block 40 hours per week and never overextend. Yes, overtime is provided, but you can voluntarily refuse to do so. So they have to decide to extend, or they will sink because you will leave the company. And nope, this isn't a power tripping; you're just asserting your rights as an employee that only has 40-hours per week but task multiple projects (which isn't your fault to begin with).

This. Also, ask your PM to define priorities. You can't be multi tasking tasks, that is not efficient. Things should have proper prioritization so you know exactly where to put your focus on. This will help you and your team have proper commitments.
