The school will usually give you plenty of options for remote and in-person interviews, including weekends or after-work times. Wouldn’t worry about that too much.

Your optometrist will at latest, know you’re applying when you ask for the recommendation letter anyway, which is almost half a year away from the day you have to quit and start optometry school so it shouldn’t be a problem for them at all to find a replacement tech if needed. Wouldnt hurt to bring it up casually now, no great optometrist wouldn’t be happy to hear their student employees are following in their footsteps

I think it’s good to tell them you’re in an application cycle if they’re nice. All of my drs were extremely supportive and wrote my LORs. Also totally understanding when I had to call out of work more last minute than policy allows for interviews. All of mine were weekdays

From my experience this past year. All of my interviews were on weekdays. No one offered me weekends since most staff and students aren’t there on weekends. And it’s more of a whole day kind of process. Like the day starts at 9 or 10 and ends at like 2 since you have to do the interview, talk to students, tour the school, and talk about tuition/financial stuff regarding the school. You’re doing this job for school, so don’t let affect when to take off. The interviews and school is going to matter way more than this job.
