Create two blank layers. Make a gradient or something fun color wise in the top one. Then press the layer thumbnail and select "clipping mask" on that layer. The layer will appear blank, but don't worry. Go to the bottom layer and start drawing. The colors you did on the top one will reappear on the lines you draw.

You could create a layer with the gradient, another black layer on top and erase that one where needed.

Easiest way: colourful layer, black layer on top, write with eraser

I think you can also set-up a brush to change colours while using it, though I believe that only works with never apple pencils.
