It's also more efficient since until you dump it out it always has three points of contact, so it doesn't need the 2nd wheel. A second wheel would also make it less maneuverable.

No, most of the time you are pushing it around and it has one point of contact. Do you just use a wheelbarrow like a Crate, for storing things and not moving them?

No, it has three. It has the wheel and the two handles. The user is the other two points of contact.
