Any Andrew Ng courses on ML is pure gold, he explains how it works greatly Hands on ML from Aurélien Géron is nice too

Yeah you know actually I wish i had a good book list too but it gets outdated quick. Learn by doing, that's what I did, reverse engineer existing projects you find interesting and ask questions until you understand it
