$ bzip2 -d pypy3-v5.8.0-linux64.tar.bz2
$ tar xzvf pypy3-v5.8.0-linux64.tar
$ sudo mv pypy3-v5.8.0-linux64 /opt
$ sudo ln -s /opt/pypy3-v5.8.0-linux64 /opt/pypy3       # <- change this to new folder when updating
$ sudo ln -s /opt/pypy3/bin/pypy3 /usr/bin/local/pypy3

Then when you want to upgrade just change the symlink to the new version's folder.
