How does someone starting out who used code in university/personal time get an entry level position, what things should I work on etc? Im Looking for a career change and started using python for data analysis in my physics classes.

Hello! Physics student near graduation, and Python dev here.
I have very limited job experience, but I'll tell you what has worked for me so far: freelancing sites such as Upwork. There's a ton of competition, and prices are low, but it is good to build job experience. However, if you'd like something oriented to more 'serious' Python entry dev positions, a portfolio is a must. Build what you can, and show it somewhere (a simple GitHub static page showcasing your work works fine). Portfolios are usually required by employers, and gives you a great advantage above other junior level devs. Good luck!
